OK, an update:
Paul Filkin helpfully pointed out that I can customize the quick insert panel for the file type in question, which I did today (I made a few as type: plain text, because I couldn't figure out a different strategy), and after restarting the program, at least I can enter them quickly from the toolbar and the quickinsert panel, so it saves me some typing, although it's less than ideal because it doesn't enter them as protected tags in the editor, so an entity is only an errant backspace away from not coming out right when the document is converted to PDF eventually.
BTW, what the heck does "strong formatting" mean in the context of Studio 2011's editor?
